Cherry Wheat Beer

CLASSIC BEER STYLE: CHERRY WHEAT BEER

When it is as hot as it has been lately in Atlanta, you want a brew that is refreshing, flavorful, and satisfying. Wheat beer has a nice tartness that provides a crisp tasting brew with a clean finish. If you want, you can substitute Raspberry or Blueberry. After you brew your first batch of Cherry Wheat Beer, you may wish to try one of yours besides a Sam Adams and see which one you like most!

INGREDIENTS:

� 6.6# (2 cans) Muntons Wheat Malt Extract syrup

� 3 ounces Hallertau Hersbrucker hop pellets

� 1 WhirlFlock Tablet

� 6 ounces Cherry Extract (for flavoring and aroma)

� 1st Choice: Wyeast American Ale yeast #1056

� 2nd Choice: SafeAle US-05 American Ale Yeast

Procedure:

Add 1 can of the Muntons Wheat Malt extract and 2 ounces of Hallertau Hersbrucker hops, for bittering, to 2 gallons of water. Boil for 45 minutes. Add the WhirlFloc Tablet, to aid in clearing, and 1/2 ounce Hallertau Hersbrucker hops for flavoring. Add the 2nd can of Muntons Wheat Malt extract and boil 15 more minutes.

Sparge your fresh brewed beer into your primary along with enough water to make 5 gallons. Add the yeast when the temperature is less than 80F degrees. Ferment in the primary fermenter for 7-10 days. Rack to the secondary fermenter and let sit for another 5 days. Add the remaining 1/2 ounce Hallertau Hersbrucker hop pellets right into your secondary. This is known as �dry hopping� and gives your brew an amazing hop aroma. Let your brew sit in the secondary fermenter for 3 more days. Add the 6 ounces of cherry extract to your bottling bucket along with 6 ounces of priming sugar. Allow to age at room temperature for 3 weeks. It will taste great after 4 to 5 weeks.
